Brown rice cooked in mushroom, celery soup

This dish is similar to risotto.  In a medium pot, add 1 can cream of mushroom soup, 1 can condensed cream of celery soup and 2 cans of water. Bring ingredients to a boil, then add 1 box of store-bought whole grain brown rice.  Finish cooking according to rice box directions.

Baked Sweet Potato

Instead of a regular baked potato, try baked sweet potatoes.   They are naturally sweet and nutritious.  With or without butter, they taste great.

Mashed Cauliflower

Cut off the stems of two heads of cauliflower. Stem vegetable for five minutes or until soft, not mushy. Add to a food processor with ¼ cup half and half and ½ stick butter; pulse a few times then add a few cloves of pressed garlic.  Salt and pepper to taste.  Continue to pulse until desired consistency.

Broiled Asparagus w/Parmesan Cheese

Trim off the stems of one bunch of asparagus, then place the vegetable in a shallow casserole dish.  Drizzle a few tablespoons of extra virgin olive oil over the asparagus.  Season with salt and pepper and top with shredded Parmesan cheese.  Broil on low for about five minutes and serve.

Roasted Chicken w/Pears

Pears add a nice hint of sweetness to chicken. Season your bird, then put it in a roasting pan with a few pears that have been peeled and pared. Bake covered for about one hour and a half at 350 degrees. Bake uncovered for another half hour or until the chicken is done and golden brown.

Jane's Krazy Mixed-Up Salt w/String Beans
